What Makes Bitters Bitter?

Quassia
We’ve chosen quassia as one of our main bittering agents because it has an extremely clean, bitter taste. It provides plenty of bitterness without covering up the other flavors in our bitters.

Gentian
Gentian is the main bitter ingredient we use. Found in the mountains of temperate zones, gentian is a striking plant with bright blue flowers. It has an earthy bitter flavor and helps to stimulate digestion.

Hops
Hops are bitter, so we use them in our lighter bitters to replace some of the earthy gentian. Hops also bring a lovely floral note to our citrus bitters that we couldn’t get otherwise.
