This drink is one of Dan's favorites in the summer. Not too sweet, super refreshing, and perfectly unexpected. The key to this is the citrus rosemary syrup. A little effort in the kitchen for great reward.
1.5 oz gin
1 oz citrus rosemary syrup*
5 dashes The Bitter Housewife Cardamom Bitters
Soda water to top
Add gin, syrup, and bitters to a collins glass, stir to mix. Fill glass with ice and then top with soda. Give another gentle stir and garnish with a sprig of rosemary or orange slice.
*citrus rosemary syrup - 1/2 cup fresh orange juice, 1/4 cup fresh lemon juice, 1/4 cup fresh lime juice, 2 cups sugar, and 5 good sized sprigs or ~1/2 cup of rosemary. Put all ingredients into a small saucepan and bring to a bare simmer. Cook until sugar is fully dissolved and the rosemary is nicely infused into the syrup, about 15 minutes. Feel free to taste and cook longer to get more rosemary flavor.
