This low alcohol twist on a Paloma is packed with flavor and a lovely balance of sweet, tart, and savory. I promise you'll find many other uses for your grapefruit thyme syrup. It's extremely versatile and oh so tasty, even just in sparkling water.
1 oz dry vermouth
.5 oz tequila
.5 oz grapefruit thyme syrup*
Splash of soda water
4-6 dashes The Bitter Housewife Grapefruit Bitters
Mix vermouth, tequila, syrup, and bitters together in a rocks glass. Add ice, top with soda, and give one more gentle stir. Garnish with fresh grapefruit, a sprig of thyme, or both. If you want a lighter drink, simply add more soda water to taste.
*To make the grapefruit-thyme syrup add 1 oz of fresh thyme springs to 1 cup grapefruit juice in a small saucepan. Bring to a bare simmer over low heat and simmer for 10 minutes. Add 1 1/2 cups of sugar, turn the heat to medium, and simmer until the sugar is fully dissolved. Syrup will keep in the refrigerator for at least 2 months.
