Poolside in Napa

This tart, herbal spritz requires a little work in the kitchen to make the grapefruit-thyme syrup, but I'm thinking you might find it has a lot more uses and it's great to have around.

1 oz Noble verjus⁠
3 oz Orange Bitters & Soda
1/2 oz grapefruit thyme syrup*⁠

Mix together all ingredients in a wine glass, making sure the syrup mixes in. Add ice and garnish with a grapefruit twist or spring of thyme. ⁠

*To make the grapefruit-thyme syrup add 1 oz of fresh thyme springs to 1 cup grapefruit juice in a small saucepan. Bring to a bare simmer over low heat and simmer for 10 minutes. Add 1 1/2 cups of sugar, turn the heat to medium, and simmer until the sugar is fully dissolved. Syrup will keep in the refrigerator for at least 2 months.
